Why do Google reviews matter so much?
Reviews are one of the signals Google uses to rank local businesses, and the first thing customers compare between two places on the map. More recent reviews, and visible replies to them, make your listing both rank and convert better.
What are Google's rules on asking for reviews?
Google prohibits offering anything in return for a review (a discount, a free coffee) and asking only happy customers to review ("review gating"). Reviews gained that way can be removed, and Google can restrict the profile from receiving new reviews.
